Vellutata di sedano

Vellutata di sedano

Ingredienti:

3 cespi di sedano
1 scalogno
700 ml brodo
200 g patate lesse
olio e.v.o.
sale, pepe, formaggio pecorino

Istruzioni: 

Lavare il sedano, togliendo i filamenti. Tagliare lo scalogno e il sedano a fettine sottili. Rosolare in una padella lo scalogno e, appena sarà dorato aggiungete il sedano. Tagliare a cubetti le patate lesse, aggiungerle al sedano e versare il brodo. Lasciare cuocere per circa 10 minuti e passate quindi tutto con il frullatore per un tempo più o meno lungo a seconda della consistenza desiderata della vellutata. Servire coprendo con il parmigiano grattugiato.
